New Course of the Week – The Science of Gastronomy

It’s hard to imagine an online cooking class. Cooking requires ingredients and equipment, and the main test of cooking ability is taste. The Internet may be full of recipe sites, and perhaps one can watch cooking videos the same way we all watch FoodTV. I guess you can never say never, but it’s a difficult topic to teach online.

But the Hong Kong University of Science and Technology has a course on Coursera called “The Science of Gastronomy“. According to the description:

Following the video demonstrations of the scientific principles of cooking, you will learn to recognize the key ingredients and their combinations for preparing good healthy food. At the end of this course, you will be able to:

1. appreciate the scientific basis of various recipes;

2. develop your own recipes by integrating some of the scientific principles into new dishes;

3. recognize the influence of the material world on human perception from the different senses;

4. appreciate the art of integrating science into cooking and dining.

It appears there will be some tasting as part of this course, so it’s hands-on not just watching videos. Interesting.
